Irish Soda Muffins

Ingredients:
- 2 cups flour
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 teaspoon caraway seed
(optional)
- 1/2 cup sugar
- 1 egg, beaten
- 1/3 cup shortening, melted (or
canola oil*)
- 1 cup buttermilk (soy milk*
works, too)
- 1/2 cup raisins
Directions:
- Preheat oven to 400.
- Mix together first 6
ingredients.
- Stir in egg, shortening and
buttermilk until moistened.
- Fold in raisins.
- Fill muffin tins and bake
approximately 20 minutes.
- Makes 12 muffins.
